In October 1998, Jiao Tong, the literary editor of China Times, Taipei, Taiwan, invited me to write an essay on American food in American literature for presentation at the First International Conference on Food and literature, held in Taipei, May 1999. I thought I would find many reference books in this school. After much research and communications network several professors of American literature at university in the United States and Canada, I was very surprised not to find document version of the book on the subject. Not only had no book on this topic also was no single article that directly addresses the same problem. The absence of secondary sources, explains why most references in this essay are the primary sources. The limitations of time and space to write this also explains why I limited my study of American literature novels, short stories and poetry. I tried to make a representative selection among novelists, poets and novelists including the authors of almost two hundred years of American literature of both sexes and a variety of ethnic groups. Because there are so many versions of major works that quote, I merely quotes the author's name, book title and a inside as worms, chapter or section and page numbers omitted specific versions I used. lesser known works, collections and anthologies receive standard citation format.

To bring order to this vast amount of material, I created three topics on which I can build what I think American food in American literature: continuity and discontinuity, purity and impurity, and the abundance and scarcity. These three themes allow several important truths about the experience U.S. instead of appearing as the concerns of its authors as well. For example, major changes undergone by the land and indigenous peoples were accompanied by accessories European ways profound and sustainable food. Moreover, the enormous wealth of natural and artificial resources in the United States has long coexisted with the land devastated and poverty. The greatest American writers, including Melville, Faulkner, Hemingway and Steinbeck, have repeatedly recognized and sanctioned these two extremes in their plots and characters, provided they are incorporated into everyday life and the personalities of Americans.

As part of an introduction to my presentation, I would like to give some possible explanations lack of secondary sources. First, I think the most famous American food and popular, like pizza, hot dogs, hamburgers and ice are derived from European food. The pizza came from Italy. San Francisco has grown into a city of money generated by high-risk occupations such as hunting, boating, fishing, gold mining and the sea off the coast. It is easy to imagine a person watching Chinese entrepreneurs Americans involved in these occupations were in their future happiness or unhappiness, to put this knowledge with a well-established like American desserts, and the creation of a dessert sweet looks different and contains the words of wisdom about the fate of consumers.
Secondly, until recent decades, American literature and literary criticism have been dominated by men whose worldview relates to women and food to both the kitchen and out of sight. Most writers I've read this male assay used food and activities around food to highlight aspects of character or plot. They did not have a food drive and preparation, cooking, serving, eating, drinking and cleaning as the activities that will substantially improve aspects of their characters, most of which are men, or that events have progressed significantly story, plot or theme of his writing.

I mention this topic only in passing, and have no time or space here to emphasize on the subject, but simply to emphasize that focuses on food as a subject in relation to literature is an important innovation that involves wide activities the man whose presence or absence in the literature would be an interesting extension of this debate.
Third, as an American, I believe that most Americans food for granted. We tend to see it as an inevitable burden placed on our freedom Measures taken by the condition of having a physical body. The growth, popularity and power of the fast food industry in the United States reflect this disdain for the needs of local food.

Most of these male authors such as Hawthorne, Twain, Faulkner, Hemingway, Steinbeck, Poe and Miller, always placed his main characters, most of whom were men, positions that require the creation of a stable and meaningful life. As the first pioneer settlers, including immigrants, his characters are continually faced with challenges for their survival, their ability and virility when defined in terms of superiority manifested in verbal and physical place of mutual care cooperatives and stimulating. ironic example is con-Ayn Rand, a writer who fully accepts the values of competence, personal power and individualism wild. His characters powerful men, such as godlike architect in Atlas Shrugged, face problems and situations that require strong individuals, creative and production scale.

The fact that the creation and production has also consumed energy, resources, time and money has not been a central concern to the beginning of the environmental movement end 50 and 60. The fact that the creation and production often leads to emotional and physical deprivation less independent beings, including children, animals, women, the poor and members of ethnic minorities was not a central concern of American writers and critics until the late 50s and 60s. These are at least four reasons why there is such a shortage of secondary sources on the topic of American food in American literature. It is, indeed, a book waiting to be written.

Fortunately, however, there are many cases of food in American literature and show some interesting trends and characteristics. I created three themes focus these patterns and characteristics: continuity and discontinuity, purity and impurity, and the abundance and rarity. First, I will briefly describe the content and the justification for each item and then proceed to the literary material that illustrates, in particular, and is illuminated by each subject.

A. Continuity and discontinuity. The first European settlers on the east coast of America experienced several discontinuities and began to create new ones. In crowded European cities and agricultural lands came vast and sparsely populated, and forests, mountains and valleys. Society intolerant rigidity of the century, many 16 and 17 European countries came to a land whose societies those of indigenous peoples, have been completely foreign and closed. B. The purity and impurity. C. Abundance and scarcity. From 1895-1915, approximately 23 million who migrated from Europe to the United States. These People came from all over Europe. They left the living conditions characterized by poverty, political instability and oppression and the lack of any opportunity improvement. America was a land that promised to make their dreams of prosperity, wealth, abundance and freedom is realized. Many of these immigrants have made their fortunes America and then returned with them to their families in Europe. But many others remained in the U.S., had their families and began contributing to the tastes, colors and flavors of an increasingly diverse scene. This period of intensive migration marked the beginning of neighborhoods in big cities like New York, Boston, Philadelphia and Chicago. These ethnic enclaves have been for Italians, Poles, Germans, Jews, and blacks are trying to find an alternative to military defeat, but racism still powerful former masters of the south or other persons whose strong collective identity always brought special foods that have been magnified by larger and larger scales of American life.

A first look at the issue of continuity and discontinuity can be seen by comparing the two quotations at the beginning of this essay. Elinor Wylie lived from 1885-1928. Jack Kerouac lived from 1922-1969. Ripe fruit edible food is like a tree in Wylie's poem and as an ingredient of the pie in Kerouac's novel. Wylie cherries and peaches are not processed close to nature as apple pie baked by Kerouac. In fact, Dean Moriarty was based on the real man, Neal Cassady. In 1964, lived in Palo Alto, California after leaving Stanford University to try my hand at writing fiction and poetry. I met a lovely young woman who was a freshman at Stanford University and a guest in a party. The party was in a house in Palo Alto is that it has been increasingly seen as a suitable place for the Mavericks and the beatniks. In general, this verse and quoted at the beginning of this test for spectacular displays of the three themes. There is continuity and discontinuity between the religious doctrines of European heritage, Puritanism, which emphasizes the great achievements of the world, but only show worldly possible. The tension between the narrator and his guests in Poe's tale, taking the tension between the narrator and hero of the road. Jack Kerouac's appointment is part of the first person narrative novel, Sal Paradise support secondary character based on Kerouac himself. Wylie poetic image is from his life in New England. The abundance that hates Wylie is also rejected by Kerouac in a left hand, casually, as if the time spent at least one man as common as the food of better quality or more than one person he was. However, the oscillation between abundance and scarcity appears in Kerouac's novel in the contrast between Sal Paradise and the protagonist of On the Road, Dean Moriarty.

It is certainly also interesting to note in passing that the two writers, differentiated by gender, origin and time, there is a strong link between religion and the food. This community and continuity of this clearly occur in the days of the traditional American holiday of Thanksgiving, Christmas and Easter. The three meals unusually large and long and strong ties with Christians, Protestants of the first settlers in America, settlers and pioneers. As with bodily functions mentioned above, bringing the issue of food and literature in the foreground also highlights the strong presence of Judeo-Christianity in American life and literature. Again, this innovative item turns out to be a powerful lens for viewing a wide range of meanings that are repeated and widespread in American literature.

serious reflection on the relationship between diet and literature leads to a series of signifiers that underlies all literature, namely, religion. Why? Since the original writing is to convey what is most valuable perspective and experience the group. The most valuable of all is the question that promotes the survival of the group. All human groups long ago discovered that humans depend on more responsibility for survival. All human beings need air, water, food, warmth and sleep. Fear, respect for the cult of sacrifice and the powers that govern life, both visible and invisible, is the essence of all ancient religions. The old truth and spreading the message of all religions is the dependence of man on these skills, including the power of reproduction which is represented in the worship of ancestors. Religion represents ritualized and carries out the fundamental truth of addiction rights. The denial of this dependency can lead to creative and innovative spirituality deeply transformational and self-destruction and madness. Humans can imagine freedom absolute, but to try to live it, as Nietzsche has shown, only leads to self-destruction and madness.

Sylvia Plath (1932-1963) dealing the folly of his life and ultimately ended his life by suicide. The following poem opens with the kind of hymn to the natural wealth that we saw in Wylie's poem ends with a similar feeling empty and cold space money. The contrast between "nothing" and "minor" in the first line: the tension between the abundance and unfilled. This in turn means connected with the tension between purity and impurity in the sense of nothingness as a spiritual being advanced and desirable state and that the physical conditions spiritual devotees on earth. It's not a chance in this perspective, Neal Cassady, the person living behind the character of Dean Moriarty, Kerouac died of a drug overdose in hot rails, steel gloss of a railroad in central Mexico. Drug use among all groups has traditionally been associated with the alignment of personal and group of great powers in order to improve the group's ability to survive. Cut your traditional moorings in religion, drugs have become a form of control of the physical, mental spiritual and absolute freedom. The fact that many drugs, including LSD, cocaine, methamphetamine and opium, allow the user the impression that food need not and other physical facilities for their existence, shows exactly how they fit into the attempt to deny dependency and achieve absolute freedom. The discontinuity of the American experience of ancient traditions, the abundance of material wealth and often tacit ideal of a pure substance, immaterial soul have worked together to produce literature in their characters as Dean Moriarty, who make life and death in the tightrope between innovation and self-destruction.

Or, to condense our issues in language concise and excellent American poetry of William Carlos Williams: "The pure products of America is crazy" (from "On the way to hospital Psychiatry)

The theme of abundance can be found in all periods of American literature. A fillet of beef, a quarter back of the calf, a pork ribs, chicken, in particular, or a turkey worthy of praise, which had perhaps adorned his table … We will remember … 13.
